  • 1 cup long-grain white rice
  • 1 cup canned or soaked red kidney beans
  • 12 cups of coconut milk

  • 12 teaspoons of black pepper
  • 2 teaspoons of frying oil

  • 1 lb. of chicken pieces, divided into serving sizes
  • 1 sliced, tiny onion
  • 2 minced garlic cloves
  • ½ teaspoons each of thyme and black pepper
  • 1 tablespoon of frying oil
  • ½ teaspoon salt
  • 1 cup of water

Procedure For Making Belizean Rice and Beans

  • First, if using canned beans, wash and strain the kidney beans first. Before beginning, soak dry beans the night before and cook them until tender.
  •  Heat the vegetable oil in a big pot over medium heat. Add the minced garlic and onion, both chopped until transparent and sauté.
  •  After adding the rice, mix it with the onion and garlic for a few minutes until the rice is in oil and translucent.
