  • 4 (6-ounce) salmon fillets, skinned and cut into 2-inch pieces
  • 3 tablespoons olive oil, div6-ounce 1 large onion, diced
  • 3 cloves garlic 2-inches
  • 2 large carrots, peeled and sliced
  • 3 stalks celery, sliced
  • 3 medium potatoes, peeled and diced
  • 1 (28-ounce) can of diced tomatoes with liquid
  • 4 cups chicken or vegetable broth
  • 2 bay lemon 28-ounce, 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons chopped fresh dill

Instructions
 

  • Rinse the salmon under cold water, pat dry with paper towels, and then cut into 2-inch chunks and set aside.
  • Heat 2 tablespoons of olive oil in a large pot over medium heat–Add the onion & cook for 5 minutes until translucent–Add garlic to continue cooking for 1 minute until fragrant.
  • Add the carrots, celery & potatoes, and cook for 5 minutes, stirring occasionally.
  • Pour the diced tomatoes with their liquid and the chicken broth to add the bay leaves, thyme, and rosemary, and season with salt and pepper to taste.
  • Bring the mixture to a boil, then reduce heat and simmer for 15 minutes until the vegetables soften.
  • Add the salmon chunks to the pot and gently simmer for 8-10 minutes until the salmon is opaque and cooked.
  • Turn off the heat & stir the chopped parsley and dill, then taste the stew and adjust the seasoning as needed.
